Exotic Brown Rice


Preparation Time -10 minutes
Cooking Time – 10 10 12 minutes
Serving -2

Ingredients:
Brown rice, boiled – 2 cup
Olive oil – 2 Tablespoons
Cumin seeds – ½ Teaspoon
Green bell pepper, chopped – 1/4 cup
Yellow bell pepper, chopped – ¼ cup
Red bell pepper, chopped – ¼ cup
Green Zucchini, chopped – 1/4 cup  
Yellow zucchini, chopped – ¼ cup
Salt to taste
Lemon juice – 1 to 2 Tablespoon
Black pepper powder – ¼ Teaspoon

Method:

Soak brown rice with sufficient water for 2 hour. Wash it well and presser cook with 4 cups of water for 6 to 7 whistle or till rice cook.

Heat oil in kadai, add cumin seeds, let them crackle.

Add yellow green red bell peppers, yellow zucchini, green zucchini, salt and mix well. cook for 3 to 4 minutes.

Add boiled brown rice, black pepper powder and mix well. cook for 3 to 4 minutes.

Add lemon juice and mix well.

Garnish with grilled zucchini slice.

Serve hot.
