Vangi ( Stuffed Baigan) - Maharashtrian style


Serving - 2 

Ingredients:
Small Baingan- 8 to 10
Roasted peanuts - 1/2 cup
Ginger - Garlic Paste - 2 Tablespoons
Red Chilly Powder - 1 Tablespoon
Coriander powder - 1 Teaspoon
Salt To Taste
Garam Masala - 1 Tablespoon
Oil - 4 Tablespoons
Water - As Per Required
Chopped Onions -   3 Tablespoons

Method :
Take one mixi bowl and add roasted peanuts , Ginger - garlic paste , Red chilly powder , coriander powder,salt , Garam masala and blend them coarsly . Take this mixture in another bowl and add chopped onions  and mix well . Stuff Baigan with this masala.
Microwave this stuffed baigan for 8 to 10 mini.
Take one pan heat oil and  add all reaming stuffing . saut√© for 2 to 3 minute. Add  1/2 cup water .
Add stuffed baigan , cover lid for 3 to 4 minutes . cook till done .
Serve Hot with roti .
